Look a little closer

A raw egg white is clear and fluid, but heat from a pan or hot water makes it white and firm. Proteins are at the center of the change. The white contains several kinds of protein dispersed in water, while the yolk contains particles made from protein and fat. In a raw egg, many of these molecules are folded into shapes that interact with water, so the mixture can flow.

Heating jostles some of the weak forces that hold a protein in its folded shape. The molecule opens up, a process called denaturation. Denaturation does not mean the protein vanishes or simply turns into a solid. Its three-dimensional arrangement changes. Parts of the molecule that were tucked inside can become exposed, making it easier for neighboring proteins to meet and interact.

With continued heating, unfolded proteins join and tangle into a fine network. Water is held in the spaces of that network, so the egg becomes a gel that no longer flows easily. Egg white also turns opaque because the new microscopic structure scatters light in many directions. The water has not disappeared; the arrangement of water and protein has changed.

White and yolk do not set at exactly the same rate because their ingredients and proteins differ. That is why a softly cooked egg can have a set white and a creamy yolk. Temperature, cooking time, egg size, and method all affect the texture. The same idea helps explain why a gently cooked custard can stay smooth, while eggs exposed to excessive heat may become coarse and release liquid as the protein network tightens too much.

Once a dense protein network has formed, ordinary kitchen conditions cannot easily return it to the original clear liquid. Ingredients that change the environment around proteins, including acids or salt, can influence how they aggregate, but heat is the familiar force that makes an egg set. A cooking egg is therefore a small, visible kitchen experiment: a molecular rearrangement becomes a change in color, texture, and flow.
