Look a little closer

A pale grey or white film on chocolate does not automatically mean mold. Very often it is a surface change called bloom. Temperature and moisture can rearrange fat or sugar near the surface, replacing chocolate's usual smooth shine with a light haze, streaks or small patches.

The better-known kind is fat bloom. Cocoa butter can solidify in more than one crystal arrangement. Well-tempered chocolate is made to set in an arrangement that gives it a smooth surface, a firm snap and a good gloss. During storage, temperature swings or partial melting can let fat move and crystallize differently. Fat crystals that collect near the surface scatter light differently, making a smooth-looking pale film or marbling visible.

Sugar bloom begins differently. Moisture from humid air or droplets on the surface can dissolve a small amount of sugar. When that water later evaporates, the sugar can recrystallize at the surface, leaving a dry, dusty and sometimes rough white coating. Condensation on cold chocolate taken from a refrigerator into humid air is one situation that can make this process more likely.

The two forms are not always possible to identify perfectly by sight alone. Fat bloom often looks smoother and more streak-like, while sugar bloom tends to feel and look drier or grittier. Real products can be more complicated: both processes may occur together, and fillings, other fats, manufacturing conditions and packaging can all influence the result. A white mark alone is not a complete diagnosis.

For chocolate that has otherwise been stored normally, bloom is chiefly a quality and texture issue, not proof that the chocolate has become unsafe. It can make the snap less clean or the mouthfeel less pleasing. Still, bloom should not be used to dismiss other warning signs. An off smell, persistent wet damage, or fuzzy growth deserves separate caution. Bloom is usually a rearrangement of ingredients already in chocolate, rather than a living growth on it.

Prevention is less about making chocolate as cold as possible than about keeping its environment stable. Protect it from direct sun, heat sources, large temperature changes and humid air; an airtight package in a cool, dry place helps. If chocolate has been refrigerated, keeping it wrapped while it returns gradually toward room temperature can reduce the chance that moist room air condenses on it.

Bloomed chocolate is often still useful for melting into baking, drinks or sauces. Re-melting and proper tempering can improve the appearance of fat bloom, although sugar bloom may leave a less perfect texture because moisture has already changed the sugar at the surface. The pale film is a reminder that chocolate is not a uniform brown solid: it is a delicate balance of cocoa-butter crystals, sugar and very little water.
