Look a little closer
Salt adds flavor, but it has also been used to preserve food for a very long time. When fish, meat, or vegetables are salted or placed in brine, they do not stop changing instantly. Instead, salt changes how much water is available to microorganisms. The important idea is not simply the total amount of water in a food, but water activity: the portion of water available for microbial growth and for certain chemical processes.
When salt dissolves, sodium and chloride ions interact with water molecules. Some water then becomes less available for microorganisms to use. The food's water activity falls, and many bacteria, yeasts, and molds have a harder time maintaining the balance of water across their cells. Salt is not a magical ingredient that immediately kills every microbe. More often, it creates conditions in which growth is much more difficult.
Osmosis contributes to the effect. If the salt concentration outside a microbial cell is high, water can move out of the cell, making normal function harder. A related effect is visible when salt draws some moisture from cut vegetables during pickling. Yet microbes vary: some are notably tolerant of salt. The effect of salting therefore depends on concentration, the food's acidity, temperature, and the other preservation methods used alongside it.
That is why salt alone does not make every food safe. Cured and pickled foods are commonly managed with acidity, fermentation, drying, refrigeration, heating, and clean containers as well. Water activity is also not identical to moisture content. Two foods can look similarly moist while offering very different amounts of usable water, depending on how strongly their water is associated with salt, sugar, proteins, and other ingredients.
Modern food preservation relies on measured formulations and validated methods. For home canning or pickling, following tested recipes and storage guidance matters. Salt is best understood as a tool that slows food's clock. Rather than removing all water, it changes water's availability, which restrains microbial growth while also changing flavor and texture.
